Ingredients:
– 2-3 sliced peppers (I used different colors)
– 1 chopped onion
– 4 to 5 boneless, skinless chicken thighs
– 1-2 tablespoons taco seasoning (I like Siete or Saveur Dieu)
– 2 tablespoons of avocado oil (or olive oil)
– Salt and pepper to taste
Serve with guacamole, salsa, tortillas and any other toppings of your choice.
Directions
Preheat oven to 425 degrees. Prepare the vegetables and place a baking tray lined with parchment paper. Add the chicken and vegetables to the sheet pan (I sometimes use two pans to avoid overcrowding), cover with oil and taco seasoning, and toss everything so it's well coated. Bake for 30 to 32 minutes, slice the chicken and heat the tortillas in a pan. Add your favorite toppings and enjoy!
